The Art of Roasting Coffee
At Ancora, our mission is to draw out each coffee’s distinctive character during every single
roast. Roasting is truly an art form performed by skilled craftsmen. If roasting is stopped too early,
the result is pale and flavorless coffee. On the other hand, if the beans roast too long, a
sharp and burnt coffee is produced. Every single coffee has its own personality and its own
flavors to nurture. At Ancora we use the traditional hands-on roasting method
(no pre-set computer controls here!) and meticulously nurture each batch until the Sweet
Spot is hit...that's precisely the instant when the coffee peaks in flavor, body and aroma.

Roast Profiles
Raw Green Coffee
Specialty grade green coffee is actually the seed of the coffee tree Coffea Arabica.
This is the raw material of all Ancora coffees.
White Coffee
As the beans absorb heat, they metamorphosis into a light buttery, taupe color. This is the roast level of Ancora's Cafe Bianco.
Cinnamon or American Roast
Cinnamon refers to the light colored roast used by most institutional roasters. This color occurs after the first crack,
which results from the explosive release of steam. At this point weight loss is minimal, making the coffee very economical
to produce; however, rich coffee flavors are still largely undeveloped.
City Roast
This level of roast is slightly more costly to produce than the cinnamon roast and offers some additional flavor development.
Many institutional roasters use coffee roasted to this level for their high-end specialty coffee labels.
Ancora Artisan Roast (also called Full City Roast)
A full city roast, handcrafted in small batches. Catching the beans at the apex of their flavor development, or the 'sweet spot',
requires the careful attention of experienced roasters. This is the secret behind Ancora's rich, aromatic coffees.
Ancora French Roast
Roasted to rich ebony brown the Ancora French Roast is intense, dark and packs a full flavored punch without the burnt taste often
found in French roasts.
