These bold coffee beans are produced cooperatively by the indigenous Toraja mountain people in Central Sulawesi. This tropical island, known as both Sulawesi and Celebes, is a collision zone for two of Earth's crustal plates resulting in sharply ridged, heavily forested and isolated countryside. Extended family groups harvest and mill the beans in this extremely rugged country. Our Celebes is grown in the small towns of Sapan and Minanga. It's a very well balanced coffee featuring broad full body with buttery texture, sweet floral and subtle spice flavor characteristics as well as a subtle surprisingly sweet-wine acidity.
