Organic Fair Trade Nicaragua is shade grown in the country's prime coffee area of Segovia. It is a true specialty coffee, grown from the heirloom Arabica varieties Bourbon and Typica. The plants are high-grown at over 3900 ft. elevation, the beans are milled with great care in community-owned wet mills and then sun-dried. This geography and care that is given to the green beans at harvest are reasons for this coffees wonderful brightness and interesting clean flavor notes. PRODECOOP is the umbrella group for Segovia's farmer-owned cooperatives. Prodecoop is a "cooperative of cooperatives" located in the state of Esteli, Nicaragua. Their membership is comprised of 40 coffee-growing co-ops, over 2300 member-producers, which comes to approximately 10,000 individuals with a relationship to the co-op!
