The Art of Roasting
Hand-selected, premium coffee beans are
merely the first step in crafting an exceptional cup of coffee.
The true artisanship is in the roasting process.
At
Ancora, our skilled roasters' mission is to bring out a each
coffee's distinctive character during the roasting process.
If roasting is stopped too early, the result is pale, flavorless
beans. If the beans are roasted too long, a sharp, burnt coffee
is produced. After many years of methodical refinement, our
Roastmaster and his team have perfected the Ancora
Artisan Roast.
Below you will find a description of our trademark roast, as
well as several other commonly described roast levels.
The Ancora Artisan Roast
This full city roast, handcrafted in small batches, is roasted
to a lustrous chestnut-brown color with a slight sheen on the
surface of the beans. Full flavor development and unique varietal
characteristics are the hallmark of this roast. Bringing the
beans to the pinnacle of their flavor development, or the 'sweet
spot' requires the careful attention of experienced roasters.
This is the secret behind Ancora's rich, aromatic coffees.
"White" Coffee
As the coffee beans are heated in the roaster they begin their
metamorphosis changing to a buttery, harvest gold color. This
is the roast level of Ancora's Café Bianco, used in making White
Zombies. At this level, the coffee has a light, nutty or grainy
flavor completely lacking any of the usual flavors normally
associated with coffee.
Cinnamon or American Roast
Cinnamon refers to the light colored roast used by most institutional
roasters. This color is reached after the first crack, which
results from the explosive release of steam. At this point weight
loss is minimized making the coffee very economical to produce.
However, rich coffee flavors are largely undeveloped.
City Roast
This level of roast is a bit darker than the American, medium-brown
in color, and dry on the surface (no oil development). This
level is slightly more costly to produce than the cinnamon roast.
It offers some additional flavor development. Coffee roasted
to this level is used by many institutional roasters for their
high end gourmet coffee blends.
French Roast
Roasted to a rich, ebony brown, with a distinctly oily surface.
The Ancora French Roast is intense, dark, and packs a full-flavored
punch without the burnt taste often found in many French roasts.
