Specialty Coffee in America
The term Specialty Coffee was coined in the early 70's
by Erna Knutsen. Knutsen founded her coffee brokerage Knutsen
Coffees, Ltd., in 1985, and helped found the SCAA (Specialty
Coffee Association of America).
It was in the early 70's that a small-scale revolution began
to take place in America. In larger cities like New York,
Chicago, San Francisco, and Seattle there were still roasters
producing good quality coffee. These roasters, and the brokers
who supplied them came together to educate people and nurture
their dedication to quality coffee. In the years since the
inception of the SCAA, its membership has grown into the thousands.
